Calistoga opened its doors to the public in 2004 after the owner amassed a fine collection of 600 bottles of Californian wines. It’s fair to say that this restaurant knows a thing or two about Californian grapes and how well they compliment delicious food.
A cosy little restaurant tucked away behind Rose Street in central Edinburgh, Calistoga offers a fantastic selection of fresh and beautifully cooked food. From clam and miso broth to glazed pork loin with buttered spinach, garlic tiger prawns and pork belly, you will be truly spoilt for choice. Alternatively, if you fancy beef you can create your own meal from their Buccleuch grill menu. From Buccleuch Sirloin on the bone to fillet of Ostrich, you can mix and match with a mouth watering selection of sides such as red rice, roasted white onion mash, sweet potato fries and more.
All this fantastic food and wine, mixed with a relaxed atmosphere and friendly service…you couldn’t possibly ask for a better dining experience with a strong Californian twist. This is why Calistoga has built up such a loyal following from all over the world!
Buccleuch beef comes from grass-fed cattle and is traditionally matured for 21 days to add flavour. If you’re used to buying beef from the supermarket, Buccleuch beef appears a little darker – this is part of the maturing process and is a sure sign of good taste. There is also a little more fat covering these cuts of meat – this helps to keep it moist and impart that intense meaty flavour. All steaks are dry-aged for 30 to 35 days.
